Let’s see…for as long as I can remember, I have loved food. My mom says she vividly remembers me sitting in my highchair with a piece of chocolate and a broccoli stalk, thoroughly enjoying both. As a freshman in college I realized that studying nutrition would be a really cool way to help people and still do something I love. So I transferred to UVM to study nutrition and got to live in the GREAT city of Burlington, VT for a little over 2 years(recently ranked healthiest city in the US).
Now I am doing a dietetic internship(for those who don’t know it’s basically a year of clinical, community, and foodservice work to help you build a foundation and hopefully figure out the direction you want to go in). I am learning a lot about food and nutrition; so much so that it gets confusing to me, even with all my years of nutrition classes. Add in all the different buzz words in the media, and the twists that food companies put on products and “eating healthy” can be confusing for everyone. My hopes for this blog are to help straighten out some common misconceptions about healthy eating and write about what I love- food!
So….a little more about me…I currently live in Boston, I am obsessed with my Australian Shepard, Dancer(who still lives in NY where I am originally from), I love green tea, pizza(especially salad pizza!), chocolate, tofu, carrot cake, and hummus! I am very excited to get my RD in the next few months, although my current main focus will be walking( I tore my ACL skiing a few weeks ago and am 2 days post-op).
p.s. i do realize that Lisa does not actually rhyme with Pizza, but most people find it close enough and I do love Pizza~

Country Choice Organic
Easy Organic Banana Pudding:
•40 Country Choice Organic Vanilla Wafers
•4 – 4oz. cups organic vanilla pudding or 1 package (4-serving size) vanilla pudding and pie filling (prepared)
•3 medium organic bananas, sliced
•organic whipping cream
•1 1/2 quart bowl or individual serving glasses
Preparation:
1.Line bottom and sides of bowl with about 20 Vanilla Wafers.
2.Top with 1/3 of bananas and 1/3 of vanilla pudding. Repear layers of Vanilla Wafers, bananas, and vanilla pudding (pudding will be the top layer).
3.Refrigerate until ready to serve. Top with whipped cream and garnish with banana slices.
4.1 ½ quart bowl or individual serving glasses
5.Tip: Ingredients can also be layered in individual dishes for a more elegant presentation.
Yield: 6 servings
